Healthy Peanut Butter Cups


I am walking through my living room and out of the corner of my eye I catch a glimpse of a commercial on tv. BOOM. There it is. A yummy Reece's Peanut Butter cup... and what are they doing? Making the suggestion you put the chocolate goodness in the refrigerator. HOW did they know? That is one of my FAVORITE treats for myself. I am weird like that. I like almost all of my treats cold. Peanut butter cups, cake, brownies, etc. The colder the better.

Now the dilemma. I have this HUGE craving for a peanut butter cup and none in sight. Well played commercial you have done your job.  I don't keep things like that in the house for moments just like this. If I had a package of those I would have devoured the entire package before the next commercial came on. Then it hit me. I have all of the ingredients to make some! Even better, they are going to be healthy! WIN WIN!

Within 45 minutes I have a delicious snack that kept me on track and not feeling like this...


So if you have these 3 ingredients and a little bit of extra time you can whip up this quick dessert and not have to worry about the feeling of regret afterwards!

Ingredients

8 tbsp. Vegan Chocolate Shakeology, divided (you can use regular but the texture may be a little different)
4 tbsp. Coconut Oil (divided)
4 tsp. Natural Creamy Peanut Butter (divided)


First, take 2 tbsp of coconut oil and melt it in a small bowl (about 30 seconds in the microwave). Once melted, add 4 tbsp of Shakeology and mix well. Divide the mixture evenly into the bottom of your mini muffin tin or the mini papers (shown below). Put in freezer for 5 mins.

Remove from freezer and add 1/2 tsp of creamy natural peanut butter to the top of each cup.


In your small bowl heat the other 2 tbsp of coconut oil in the microwave. Add the other 4 tbsp of Chocolate Shakeology and mix well. Divide evenly and pour over the top of the peanut butter and chocolate you have already in the cups.



Put them back in the freezer for another 30 mins. Remove after 30 mins and ENJOY!

Crockpot Turbo Chili



It is that time of year. The weather is getting colder and nobody wants to be grilling outside. I am always looking for new recipes to put in the crockpot. My family is pretty set with our "family secret" chili that we have be tweaking and perfecting over the years. However, I have heard a few of my friends say how wonderful the crockpot chili recipe is from the Turbo Fire nutrition guide. I have that program and figured I may as well give it a shot..

Not only is it super easy to throw together but it was REALLY good! 

The best thing is you can make the recipe your own. Don't like beans? Leave them out! Like more veggies? Add them! I used my 21 Day Fix containers to portion out my bowl or I would have gone WAY overboard! 


Ingredients:

1 lb lean ground turkey
1 can diced tomatoes
1 large can tomato sauce
8 oz whole kernel corn, canned
1/2 onion, diced
2 cloves garlic
1 can black beans, rinsed
1 can pinto, chili or kidney beans, rinsed
1 tbsp tomato paste
1 pkg Lawrey's Chili Seasoning 
4 oz low fat shredded cheddar cheese (optional)

Brown turkey. Drain and discard fat. Place all ingredients except cheese into slow cooker. Cook for 4 hours on low, or 2 hours on high. Top with 1 oz of cheese, if desired. 


That is it! Super simple and super YUMMY!! If you give this recipe a try let me know how you like it! You can always sub the Lawrey's seasoning for chili seasoning of your own or I have heard Mrs. Dash now makes packaged chili seasoning but I have never seen it in our stores here so I am not sure what all is in it. Crock Pot Stuffed Bell Peppers

On my quest to find some new crock pot recipes I ran across this recipe for Crock Pot Stuffed Bell Peppers. Now that the temperatures are dropping and my schedule is filling up with all of the normal holiday hustle and bustle I am always on the search for something I can cook for dinner that won't have me standing in the kitchen all night after work. I will be giving this a try very soon...



Crock Pot Stuffed Bell Peppers

Ingredients

  • 6 bell peppers
  • 2 tbsp olive oil
  • 1 onion
  • 2 cloves garlic
  • 1 lb ground turkey
  • 2 tsp thyme
  • 2 tsp oregano
  • 1 tsp turmeric
  • 2 cups diced tomatoes
  • 1/2 cup parsley
  • 1/2 cup tomato paste
  • 1/2 cup water
  • 1/4 cup lemon juice
  • 2 tbsp sugar
  • 3 cups rice
  • 1 tsp salt
  • 1 tsp pepper

Preparation

  1. Cook rice as directed on package.
  2. Cut off the tops of six bell peppers. Set aside on a dish to use as lids later.
  3. Remove seeds and ribs from peppers.
  4. Heat 2 tablespoons of olive oil in a medium pan.
  5. Add 1 chopped medium onion and 1 clove of garlic (minced). Cook for 10 minutes.
  6. Add 1 pound of ground turkey to the pan, and cook until the turkey is no longer pink.
  7. Transfer turkey mixture to a large bowl.
  8. Add 3 cups of cooked rice, 2 teaspoons of thyme, 2 teaspoons of oregano, 1 teaspoon of turmeric, and 2 cups of diced tomatoes.
  9. Mix gently, and fold in 1/2 cup of parsley.
  10. Season with 1 teaspoon of salt and 1 teaspoon of pepper (to taste).
  11. In another small bowl, mix 1/2 cup of tomato paste, 2 cups of water, 1/4 cup of lemon juice, and 2 tablespoons of sugar.
  12. Mix until sugar dissolves, and season with salt and pepper to taste.
  13. Place half of the tomato paste mixture in the bottom of the Crock-Pot.
  14. Stuff peppers with turkey mixture and place upright in the Crock-Pot.
  15. Spoon the remaining tomato paste on top of the peppers.
  16. Place pepper lids on each pepper.
  17. Cook on low for 6 hours (or on high for 2 hours).

Country Style Beef and Green Pepper Soup


Fall is definitely here. The temperatures are falling, the leaves are changing and the stores are full of holiday meal displays. When it starts to get cold outside I crave soups and warm comfort foods. I would love to start utilizing my crock pot more. I know there are tons of recipes out there - I just always forget about it when I am doing my meal planning. While on my quest for new soup recipes I ran across this recipe from Clean Eating Magazine. I love this magazine and all the recipes and tips it has inside. I have this recipe on my list to try. Every time I run across it I think it looks amazing! 



Country- Style Beef and Green Pepper Soup

INGREDIENTS:

  • 2 1/2 tbsp olive oil, divided
  • 12 oz extra-lean ground beef
  • 2 medium green bell peppers, diced
  • 1 cup chopped yellow onion
  • 1 lb fresh tomatoes, chopped
  • 4 oz fresh green beans, trimmed and broken into 1-inch pieces
  • 1 cup frozen whole-kernel corn, thawed and patted dry
  • 2 cups coarsely chopped green cabbage
  • 3 cups low-sodium beef broth
  • 2 tsp dried oregano
  • 2 tbsp balsamic vinegar
  • 1 tsp sea salt
  • 1/2 tsp ground black pepper

INSTRUCTIONS:

  1. Heat 1 tsp oil in a Dutch oven on medium-high, tilting Dutch oven to coat bottom lightly. Add beef and cook for 3 minutes or until browned, stirring frequently. Drain beef on paper towels; set aside.
  2. Heat 1 tsp oil in Dutch oven on medium-high. Add bell peppers and onion and cook for 6 minutes or until edges begin to brown, stirring occasionally. Add beef back to Dutch oven along with tomatoes, beans, corn, cabbage, broth and oregano. Bring mixture to a boil over same heat, then reduce heat to a simmer, cover and cook for 15 minutes or until beans are tender-crisp.
  3. Remove Dutch oven from heat, stir in remaining ingredients, including remaining oil, and let stand for 10 minutes before serving to allow flavors to meld.

Healthy Personal Pan Pizzas!

Sometimes I just want pizza. Sitting around watching tv on rest days I see commercials for Pizza Hut, Papa Johns and others over and over. Especially with football season upon us - you can't watch tv for more than a few minutes without running across a commercial for pizza. It is nice to know there are alternatives out there for those of us who want to eat pizza but not sacrifice a whole days worth of calories for it. Here is a great recipe for a healthy alternative to a personal pizza courtesy of Clean Eating Magazine.

 

 

INGREDIENTS:

  • 1/2 cup natural salt-free tomato sauce
  • 1/4 to 1/2 tsp red pepper flakes, or to taste
  • 2 or 3 medium cloves garlic, passed through a garlic press or very finely minced
  • 2 whole-wheat, sprouted-wheat or gluten-free pitas
  • 1 cup loosely packed spinach or other winter greens, finely chopped
  • 2 oz fresh mozzarella, thinly sliced into rounds
  • 2 tbsp minced fresh basil leaves

INSTRUCTIONS:

  1. Preheat oven to 400°F.
  2. In a small bowl, combine tomato sauce, red pepper flakes and garlic; stir to mix well.
  3. Place both pitas on a baking sheet. Using a pastry brush or spoon, evenly divide sauce mixture between pitas, leaving a 1/4-inch border around edges. Sprinkle with spinach, then arrange mozzarella rounds over top of greens, dividing both evenly.
  4. Bake for 8 to 10 minutes, until greens are wilted and mozzarella is melted. Remove from oven, sprinkle with basil, dividing evenly, and serve immediately. If you’re enjoying 1 pizza, loosely wrap remaining pizza in aluminum foil or store in a sealable container for up to 2 days in refrigerator. Reheat in a warm oven or serve at room temperature.
